Self made soul food for a hectic day

Pizza and a glass of red wine CAN make the world a little bit more right! Especially after a never-ending day .

The dough is really easy. Another one of my prepare and run off until it’s ready recipes.

Mix together 7g of dehydrated yeast & 280g whole grain flour & 250ml warm (the way it comes out of the tap not boiled) water & one teaspoon of sugar. Then leave it for 20 minutes.

Then it looks like this and you’re ready to work in more flour until you have non sticking dough, roll it out more or less 5mm high.

I did put half of the dough in the freezer. The whole amount makes a pizza for 4. Image

Having a crazy day ahead of me I prepared the Pizza with the tomato sauce (ready bought this time) and baked it half through and put it in the fridge for the next day instead of baking it completely. I also caramelized some onions.

The nest day I added the onions to the base, baked this again for 10 minutes at 220°C.

Then I added fresh goat cheese….

some dark leafy greens a very unevenly poached egg and some “fleur de sel”.

& some chili….(affaire de goût:))

…I know the wine is missing!
