Sweet delicious Apricot Clafoutis….works with any other fruit of your choice or according to season.
To make 4 happy people you need:
600g washed and gutted apricots
80g pistachios (unsalted and without skin)
120g sugar (I used 100g agave syrup instead, you could use 120 coconut sugar)
125g whole grain flour
a pinch of sugar
In a pan heat & caramelized the apricots with a little butter and some sugar or agave syrup.
Preheat the oven at 180°C.
In your baking dish you can put baking paper if you are as lazy as I am when it comes to washing up and are happy to leave the butter aside.
If not you can grease the dish with butter and sprinkle with some sugar.
I did put the paper & sugar & 1/3 of the pistachios at the bottom of the dish.
I crushed the nuts a little. (food processor is fine too). & I used 20g more then the asked for in the recipe:)
Add your slightly cooled off apricots into the dish, nicely in line.
Pour the mixture of eggs, sugar or agave, flour, 1/3 pistachios & milk on top of the apricots and sprinkle with the last third of nuts.
Pop into the oven for 25 to 30 minutes.
Let the clafoutis cool off and serve with ice cream or plain, even not that cooled off is delicious:)
